I have two favorite pies in the world, buttermilk and pecan pie (when they’re done correctly). I wanted to capture lightening in a bottle, or rather, pecan pie in a jar—but without the Karo syrup. To manifest the pecan pie concept, nectarine was the thing to stabilize the matrix, suspending pecan fairy dust throughout the jar. This is an old-time favorite transported to the modern era. It’s a left handed approach to bottling the lightening/pecan and capturing the magic.
